FSSAI FoSTaC Training for Food Processing & Catering Business

In the fast-paced and competitive food processing & catering industry, adhering to the highest standards of food safety and hygiene is not just a requirement, but a defining factor for success. Recognizing this, the Food Safety and Standards Authority of India (FSSAI) has introduced the Food Safety Training and Certification (FoSTaC) program.

This initiative is instrumental for businesses seeking to excel in food safety practices. Engaging in FSSAI FoSTaC training is a strategic step that not only ensures compliance but also significantly elevates your catering service’s reputation and competitive edge. Let’s explore what FoSTaC is, its importance, and how it can give your catering business a competitive edge

What is FoSTaC Certificate?

The FoSTaC certificate is part of FSSAI’s effort to enhance food safety across India. Launched in July 2017, this program aims to create a pool of Food Safety Supervisors (FSS) who are well-versed in good hygiene and manufacturing practices as outlined in the Food Safety and Standards Licensing and Registration Regulations, 2011.

The objective of the FoSTaC Program

  • To increase the availability of skilled and trained manpower in the food industry.
  • To promote self-compliance with the Food Safety and Standards Act, Rules, and Regulations.
  • To instil a culture of food safety and bring a behavioural change in the country.
  • To simplify compliance with hygiene and sanitary requirements through comprehensive training.

Who needs a FoSTaC certificate?

All food businesses having Central Licences or State Licenses should have at least one trained and certified food safety supervisor for every 25 food handlers or part thereof on all their premises.

The food safety supervisors will be certified & trained under FoSTaC. There are 16 courses in three levels, Basic, Advanced & Special.

How long is the FoSTaC training certificate valid?

As per the FSSAI circular dated 21st July 2022, the FoSTaC training certificate is perpetual. However, if a food handler changes their area of business, they must undergo FoSTaC training again and obtain a new certificate for the respective category.

Importance of FSSAI FoSTaC training for Food Business

  • Ensures compliance with national food safety regulations.
  • Equips businesses with the knowledge and practices to prevent foodborne illnesses.
  • Enhances the reputation and trustworthiness of the business in the eyes of customers.
  • Contributes to the overall improvement of food safety and hygiene standards in the country.

FSSAI FoSTaC training is a comprehensive program that covers various topics related to food safety, hygiene, and sanitation practices. By completing the FSSAI FoSTaC training, Food business owners and their staff can demonstrate their commitment to providing safe and hygienic food to their customers. Additionally, FoSTaC training ensures businesses stay abreast of the latest FSSAI regulations and guidelines.

The Impact of Neglecting Food Safety in the Food Industry

Recent Incidents and Their Consequences

The food industry has seen several high-profile incidents recently that have brought the importance of food safety into sharp focus. News reports have highlighted multiple instances where well-known restaurants and food establishments were forced to shut down due to serious lapses in food safety and hygiene standards. These closures, often mandated by health and safety authorities, serve as a stark reminder of the critical need for stringent food safety practices.

Examples of Food Safety Failures

  • Contamination Issues: Several establishments have been found guilty of serving contaminated food, leading to health hazards and, in some cases, food poisoning among consumers.
  • Improper Food Handling: Instances of food being handled in an unhygienic manner have led to severe penalties and loss of customer trust for some businesses.
  • Inadequate Sanitation Practices: Lack of proper sanitation measures in kitchens and serving areas has been a common reason for the shutdown of several establishments.
  • Non-Compliance with Regulations: Many eateries have faced closures due to their failure to comply with local food safety regulations and standards.
